Delicious Vegan Mushroom and Barley Soup Recipe
Ingredients:
- 2 tablespoons olive oil
- 1 cup water
- 4 cups organic vegetable broth (or your preferred choice)
- 1 cup organic pearled barley
- 1 cup chopped white onion
- 2 minced garlic cloves
- 1/2 cup chopped celery
- 1/2 cup diced carrots
- 2 cups sliced shiitake mushrooms
- 1 teaspoon celery salt (or sea salt)
- 1/3 teaspoon cumin powder
- Freshly ground black pepper to taste
- 1-2 dried basil leaves
- Chopped green onions or fresh cilantro for garnish
- Lemon juice for squeezing
Preparation:
1. In a large soup pot, warm the olive oil over medium heat. Add minced garlic and sauté until lightly browned. Stir in the chopped onion and cook for a few minutes until translucent.
2. Add the sliced mushrooms, celery, and carrots; cook and stir for about 5 minutes.
3. Season the mixture with celery salt, black pepper, and basil leaves.
4. Pour in the vegetable broth, add the pearled barley, and bring the mixture to a boil. Cover and reduce the heat to low; simmer for approximately 45 minutes until the barley is tender.
